Bake your own light, fluffy Pumpkin Spiced Cakes with this easy-to-use mix. Perfect for cakes, muffins, or traybakes — naturally low carb and diabetic-friendly, with no starches, gums or gluten.

How to use (per egg batch):
1 medium egg
35g soured cream (or tinned coconut milk for dairy free)
20g olive oil or melted butter
½ tsp Vanilla Essence
55g Pumpkin Spiced Cake Mix👉 Optional: add a spoonful of pumpkin purée for extra richness.
Whisk wet ingredients first, then fold in the cake mix.
Divide into muffin cases or lined tins.
Bake at 180°C for ~20–25 minutes.

➡️ 1 egg = 2 muffins or 2 portion small cake
➡️ Full pack (8 eggs) = 2 x 7–8 inch cakes or 12–16 muffins
➡️ Increase baking time up to 40–45 minutes for large cakes (max 4 egg mix)
➡️ Allow to fully cool before topping / cutting

Definitely one of the best mug cakes, I bought 2 bags after seeing the previous live & will get around to making the muffins at some point, but the 1st bag is definitely going down the mug cake route, so quick & simple & more importantly delicious.
Well what a winner this mix is! Just tried this as a mug cake and all I can say is if you like the flavour pumpkin do yourself a favour and get a bag and it’s bloody gorgeous!
