We use minimal preservatives, so most products have a shelf-life of 5 days. We recommend freezing the items on receipt, unless they'll be used within a couple of days of delivery. All products have Best Before dates & storage instructions on the labels.

Bake your own soft Coffee & Walnut Cakes at home with this easy-to-use mix. Ideal for classic layer cakes, cupcakes or traybakes — perfectly balanced for low carb, keto, gluten free and diabetic-friendly baking.

How to use (per egg batch):
- 1 medium egg
- 35g soured cream (or tinned coconut milk for dairy free)
- 20g olive oil or melted butter
- 1/2 tsp Vanilla Extract
- 55g Coffee & Walnut Cake Mix
Whisk wet ingredients first, then fold in the cake mix.
Divide into muffin cases or lined tins.
Bake at 180°C for ~20 / 25 minutes.
Batch guide:
➡️ 1 egg = 2 muffins or 2 portion small cake
➡️ Full pack (8 eggs) = 2 x 7–8 inch cakes or 12–16 muffins
➡️ Increase baking time up to 40 - 45 minutes for large cakes (max 4 egg mix)
➡️ Allow to fully cool before topping / cutting

Storage:
Store the dry mix in a cool, dry place. Cooked cakes can be frozen (wrap well) or kept in the fridge for up to 4 days.

Love these mixes, so easy to make up just when I feel like something sweet.
This cake mix is easy to make either as a cake or muffins. It has a proper strong coffee/walnut flavour. I think the most thoughtful aspect of this mix is that it is satisfying and therefore you forget you are actually eating something good for you
We added a couple more walnuts, but we were pleasantly surprised how delicious it was. Definitely recommend! A nice treat without all the prep of different ingredients!
I'll be back for more.. 👍🏻
