📝 Using the Panda Sweet Scone Mix
Each mix contains:
Pack 1 - Original Panda Flour, Sweetener Blend, Baking Powder and Salt
Pack 2 - Dehydrated Blueberries (optional)
The blueberries are packed separately so you can choose between a traditional fruity sweet scone or a lower-carb plain version.
Additional Ingredients Required to make 6 scones
- 60g Unsalted Butter, cold
- 1 Medium Egg
- 100g Full Fat Cottage Cheese
- 75g Cold Water
📝 Method
- Add contents of Pack 1 and the cold butter to a food processor.
- Blitz for 10–15 seconds until the mixture resembles fine breadcrumbs.
- If using the blueberry pack, add the fruit now and mix briefly.
- Blend together the cottage cheese and water until smooth.
- Make a well in the flour mixture and add the egg and cottage cheese mixture.
- Using a fork, bring the dough together until all of the liquid has been absorbed.
- Knead lightly for 2–3 minutes to form a soft but firm dough.
- Allow the dough to rest for 10 minutes.
- Press the dough down to around 2cm thick.
- Cut into scones using a cutter or glass and place onto a lined baking tray.
- Bake at 190°C for 15–20 minutes until golden and firm.
Storage
Store the dry mix in a cool, dry place.
Baked scones are best enjoyed fresh on the day of baking but can also be frozen and gently reheated when needed.

The texture and taste of the Sweet Scones from the mix and easy to follow instructions are perfectly paired with clotted cream and jam along with a hot cup of tea. The three packs received make portioning really easy and of course they will freeze - if any make it that far!!! Well done Mark - another great mix
