We use minimal preservatives, so most products have a shelf-life of 5 days. We recommend freezing the items on receipt, unless they'll be used within a couple of days of delivery. All products have Best Before dates & storage instructions on the labels.

Instructions
To make a single egg version:
- Per 1 medium egg, use 35g soured cream, 20g olive oil / melted butter, 1/2 tsp vanilla extract (or other flavouring of choice) and 60g Panda Flour® Carrot Cake Mix (if using 6 eggs, use this whole packet).
- Whisk together the wet ingredients in a mixing bowl first, then add the Panda Flour® Carrot Cake Mix.
- Combine fully - a spatula is best.
- Divide the mix into muffin cases or cake dishes lined with greaseproof baking paper. For a 1 egg mix, use2 muffin cases or one small cake dish. A 6 egg mix would fill 2 equal 7-8 inch lined cake tins of around 480g mix each, or divide into 12 - 14 individual muffin / cupcake cases around 70-80g of mix per case.
- Bake for around 20 minutes at 180°C.

Sweetener Blend (Erythritol, Stevia Extract), Panda Flour® (Bamboo Fibre Coconut Flour, Psyllium Husks), Walnuts (Nuts), Baking Powder (sodium dihydrogen diphosphate, sodium biocarbonate, calcium sulphate), Carrot, Spice Blend (Ground Cinnamon (Cassia) (40%), Ground Coriander (38%), Caraway Seed, Ground Nutmeg (4%), Ground Ginger, Cloves).

All the mixes we have tried so far have been delicious. But the carrot cake is one of the best! Really liked it. May add some fruit in the future, but just as nice without it!
The mix makes a very tasty carrot cake, just as good as the fresh product that used to be available, quicker and more convenient than making from scratch although that's more rewarding, all depends how much time you have.
I'll be back for more, it's delicious and so much easier to use than making from scratch.. That sounds lazy, but I don't want to forget to use the carrots etc., and end up with fousty food that ends up in the bin 🤔
