Storage

We use minimal preservatives, so most products have a shelf-life of 5 days. We recommend freezing the items on receipt, unless they'll be used within a couple of days of delivery. All products have Best Before dates & storage instructions on the labels.

Make your own low carb, gluten free Stollen at home!

  • Cake is suitable for home freezing
  • This mix will make 8 portions
  • Stollen comes as a 2 packet mix. The first for the main cake (280g) and the second to make the marzipan filling (80g).

Instructions

  • Marzipan:
    • Add the Marzipan mix sachet to a small bowl
    • Add 15ml water and 1/2 tsp almond extract and combine to form a firm dough
    • Allow the dough to rest for 10-15 minutes
  • Stollen:
    • Add the stollen dry mix to a large mixing bowl and combine well.
    • In a separate bowl mix 2 medium eggs, 125g natural yogurt and 100g melted & cooled butter
    • Make a well in the flour mix and add the wet ingredients plus 1 tsp almond extract.
    • Mix the dough by hand to form a soft & slightly sticky dough.
    • Allow the dough to rest for 10-15 minutes
    • Cut 2 pieces of parchment paper to around A4 size 30cm x 20cm
    • Press the dough between the sheets to the size of the paper. Remove the top layer, replace it back on the dough and flip the dough. Remove the second sheet.
    • Taking a small amount of the marzipan and press flat in your hands, do this with all the marzipan so you end up with 3 or 4 pieces that you can lay along the length of the stollen dough.
    • Once you have positioned the marzipan, using the paper underneath the dough begin to roll one long edge over the marzipan.
    • Lift the other edge towards the centre to fully enclose the marzipan.
    • Roll the dough so the seam is at the base of the stollen cake
    • Lightly press the ends of the dough to create a seal and dust with a sprinkling of Panda Flour and sweetener
    • Bake for 45 minutes at 180c
