How to use (per egg batch):
🥚 1 medium egg
🥥 35g soured cream (or tinned coconut milk for dairy free)
🧈 20g olive oil or melted butter
➕ 60g Lemon Cake Mix
Whisk wet ingredients first, then fold in the cake mix.
Divide into muffin cases or lined tins.
Bake at 180°C for ~20 mins.
Batch guide:
➡️ 1 egg = 2 muffins or 1 small cake
➡️ Full pack (6 eggs) = 2 x 7–8 inch cakes or 12–14 muffins
