Panda Flour® Yorkshire Puddings

Makes 6 portions - each portion contains:
165 Calories / 16g Fat / 2.6g Protein / 0.6g Carbs / 3.5g Fibre
As with all UK labels, the fibre level has already been deducted from the carbohydrate value.
Ingredients

2 Medium Eggs

50ml (50g) Double Cream

150ml Water
-
30g Panda Flour®
-
¼ tsp Xanthan Gum
-
½ tsp Salt

Lard / Cooking Coconut Oil
Directions
The 2 egg batch above will make a Toad in the Hole for 2 meals, or 6-12 yorkies depending on the size.
For yorkies, we use a muffin tray with 10g lard per section.
The batter is a little thicker than a traditional mix but it rises nicely and doesn't fall back.
Mix together the eggs, double cream and water first.
Then add the Panda Flour®, xanthan gum (make sure the ¼ tsp is level, not heaped) and salt.
Add the lard to your oven / muffin tray and place it in the oven (preheating to 225c).
Ensure the oil / lard is very hot before adding the batter.
Bake a toad in the hole for 25 minutes, or yorkshire puddings for 23 minutes.
