Capture the taste of Christmas with this authentic Panda Lebkuchen Mix — a festive favourite reimagined for the free-from baker. Soft, gently spiced, and coated in rich dark chocolate, these traditional German biscuits bring all the warmth and nostalgia of the season, without the carbs or gluten.
Each pack makes 40 biscuits (double batch) and comes in two parts for perfect results every time:
🧡 What’s Inside:
- Syrup Mix – a sweetener and inulin blend to make your own golden syrup base.
- Spice Mix – Panda Flour®, raising agents, and a warming blend of Christmas spices.
✨ How to Use:

Make the syrup: Gently heat water with 160g of Syrup Mix, whisking until dissolved and slightly thickened.
Remove from heat and whisk in butter and vanilla extract until smooth. -
Make the dough: Combine 99g of Spice Mix with orange zest and juice, the warm syrup, and one egg.
Mix to form a sticky dough, rest 10 minutes, then roll into 20 small balls. - Bake: Place on a lined tray and bake at 170°C (fan) for 15 minutes until lightly puffed.
- Finish: Cool completely, then dip or drizzle with melted dark chocolate.
