We use minimal preservatives, so most products have a shelf-life of 5 days. We recommend freezing the items on receipt, unless they'll be used within a couple of days of delivery. All products have Best Before dates & storage instructions on the labels.

Each pack now contains 165g up from 125g which will make a 3 egg mix (6 portions)

- Bake your own light, fluffy Lemon Cakes with this easy-to-use mix. Perfect for cakes, cupcakes or traybakes — naturally low carb and diabetic-friendly, with no starches, gums or gluten.

How to use (per egg batch):
- 1 medium egg
- 35g soured cream (or tinned coconut milk for dairy free)
- 20g olive oil or melted butter

1/2 tsp Vanilla Essence
- 55g Lemon Cake Mix
- For extra zesty cakes add zest & juice of 1/2 an average unwaxed Lemon.
Whisk wet ingredients first, then fold in the cake mix.
Divide into muffin cases or lined tins.
Bake at 180°C for ~20 / 25 minutes.
Batch guide:
➡️ 1 egg = 2 muffins or 2 portion small cake
➡️ Full pack (3 eggs) = 1 x 6 - 7 inch cakes or 6 muffins
➡️ Increase baking time up to 30 - 35 minutes for large cake using full sample pack (3 egg mix)
➡️ Allow to fully cool before topping / cutting

Storage:
Store the dry mix in a cool, dry place. Cooked cakes can be frozen (wrap well) or kept in the fridge for up to 4 days.

A real treat! Make lovely light lemon sponges in less than 30mins. I didn’t add extra lemon and it was just fine, def taste the lemon but not overwhelming. Going to experiment with some lemon icing for the top next time using the sweetener blend.
