This recipe makes three portions of pastry - each portion contains:

Ingredients

30g Panda Flour®

3 Egg Whites (around 95g)

Pinch of Salt

Spring roll filling - your choice of stir fry veggies & protein

500g Lard / Cooking Coconut Oil (most of this will be leftover and can be reused once strained)
The Pastry
To complete the spring rolls:
Directions
Mix together the ingredients in a bowl and kneed into a sticky dough.
Divide into 3 x 40g portions and roll out to around 4 - 5 inch.
Fill (don't over fill) and fold into a spring roll.
Cooking
Heat a pan to melt the lard / cooking coconut oil.
Check the lard / cooking coconut oil has reached 180°C. Once it has, add the spring rolls. Allow them to cook for 3-4 minutes or until golden, using tongs to turn them over part-way through. Once fully cooked, transfer them to a bowl with some kitchen towel to absorb any excess oil.
