Dividing into 16 slices, each weighing 35g:

As with all UK labels, the fibre has already been deducted from the carbohydrates. The carbohydrate values stated above are net carbs.
Ingredients

30g Chia Seeds

180ml Water

3 Medium Eggs

5g Banana Extract

5g Vanilla Extract

100g Panda Flour®
-
50g Sweetener (an Erythritol & Stevia or Erythritol & Monkfruit blend)

10g Baking Powder

120g Melted Butter / Melted Coconut Oil / Olive Oil

50g Walnuts

25g Cacao Nibs

Directions
In a small bowl mix the chia seeds and water. Stir and then allow to rest for 10-15 minutes. The mix will turn gloopy.
In a large bowl mix the eggs, banana extract and vanilla extract. Add the Panda Flour®, sweetener and baking powder.
Allow the butter / Coconut Oil to cool and then add this to the flour mix.
Once the chia has thickened, thoroughly mix it into the dough. The dough should be slightly sticky. Optional extra- add 50g of walnuts or 25g cacao nibs for extra crunch.
Line a 2lb loaf tin (8x3 inches) with parchment paper, add the dough and press it down.
Bake at 180c for 90 minutes.
The loaf should have a nice firm crust and a dense inner.
