Flavoured Panda Bread

The one egg mix contains:1175 kj / 283 kCal // Protein: 9.1g // Carbohydrate: 3.8g (of which total sugar: 3.3g) // Fat: 23g (of which saturates: 4.5g) // Fibre: 10.6g // Sodium: 772.7mg.
A 3-egg loaf contains: 3561 kj / 859 kCal // Protein: 27.9g // Carbohydrate: 11.6g (of which total sugar: 9.9g) // Fat: 70.9g (of which saturates: 13.8g) // Fibre: 32.1g // Sodium: 2341.4mg.
A 40g slice contains: 446 kj / 107 kCal // Protein: 3.5g // Carbohydrate: 1.5g (of which total sugar: 1.2g) // Fat: 8.9g (of which saturates: 1.7g) // Fibre: 4.0g // Sodium: 293.5mg.
As with all UK labels, the carbs listed above are already net carbs. Do not subtract the fibre.
Ingredients

1 Medium Egg

30g Greek Style Yogurt or Fat Free Natural Yogurt - the fat free yogurt will give a better rise, but the full fat Greek-Style works too.

18g Olive Oil (we use light olive oil) or Melted Butter

15g Panda Flour®

1g (¼ tsp) Bicarbonate of Soda

1g (¼ tsp) Apple Cider Vinegar

1g (¼ tsp) Salt

1g (¼ tsp) Dried Fast-Acting Yeast

Flavourings & seasonings of choice e.g. cheese & marmite, olive & feta
Multiply the quantities below by the number of eggs you’d like to use. For 6" round loaf or 7" rectangular loaf, use a 3 egg mix.
Directions
Preheat the oven to 180°C.
Add the eggs, yogurt, olive oil / butter and vinegar to a large mixing bowl. Whisk them together.
In a separate bowl, add the dry ingredients - Panda Flour®, Yeast, Bicarbonate of Soda, and Salt. Mix together and ensure there are no lumps.
Add the dry ingredients to the large mixing bowl with the wet ingredients. Start whisking them together - after a few minutes, you’ll hear the vinegar & bicarbs reacting.
This is a batter more than a dough. It will start to hold together, but you won’t be able to knead it like a traditional bread dough.
If you’re making a flavoured loaf, add your chosen flavours now.
Pour the bread mix into your loaf tin. If you’re making the 1-egg mix, use a silicone muffin mould or something similar.
Bake for 35 minutes, until the loaf is firm on the bottom. If you’re making the 1-egg mix, bake for around 15 minutes.
