Onion Bhajis using Panda Flour®

Ingredients

220g Shallots

Handful of Coriander

10g Ground Cumin

10g Salt

5g Ground Turmeric

5g Chilli Powder

60g Panda Flour®
-
250ml Water

500g Lard / Cooking Coconut Oil (most of this will be leftover and can be reused once strained)
Directions
Heat a pan to melt the lard / cooking coconut oil.
Slice the shallots into long thin strips and place in a large mixing bowl.
Chop a handful of fresh coriander and add to the shallots.
Squeeze the shallots to extract some of their moisture.
Add the spices and mix well.
Add the Panda Flour® and mix well
Add the water and continue to squeeze the mixture until it becomes firm and doughy.
Divide the mix into 12-14 equal portions.
Squeeze each bhaji to create a tight compact ball.
Check the lard / cooking coconut oil has reached 180°C. Once it has, deep fry a few bhajis at a time for 3 - 4 minutes.
Once fully cooked, transfer them to a bowl with some kitchen towel to absorb any excess oil.
