Panda Flour® Christmas Cake Baking Mix (360g)

Instructions

• Preheat Oven to 180c.
• Melt 150g butter and allow to cool
• Add the Christmas Cake Mix to a large bowl and make a well in the centre
• Add 6 medium eggs, the juice and zest of one orange, 1 tsp vanilla extract, 1 tsp almond extract and the melted butter. Optional extra: 50g medjool dates, stones removed and chopped into small pieces
• Using a spatula, bring the mix together to form a sticky but firm dough. The final part of mixing will need to be done by hand.
• Line a 6 - 7 inch cake tin with parchment paper and press the dough into the tin
• Bake for 55 minutes at 180c. Don't open the oven during the baking process as this will effect the rise of the cake.
• Allow to fully cool (overnight is best) before topping
